Easy Spinach Stuffing
This tasty stuffing recipe is loaded with creamed spinach and mushrooms. The ricotta cheese adds a unique creaminess to this recipe. This is a great side dish for Thanksgiving dinner, but is so easy that it's perfect any night of the week.

Ingredients
- 2 sticks of butter
- 1/2 pound mushrooms, thinly sliced
- 1 1/2 cup celery, diced
- 1 cup onion, chopped
- 16 ounces package of frozen creamed spinach, defrosted
- 6 cups seasoned bread crumbs
- 2 cups ricotta cheese
- 2 eggs
- 2 tablespoons parsley, minced
Instructions
- Melt the butter and saute the mushrooms, celery and onion for about five minutes, until tender. Remove from the heat.
- Add the remaining ingredients. Mix well. Transfer everything to a casserole dish. Bake at 325 degrees F for 30-45 minutes.
