Ingredients:

- Use room temperature ingredients for the best results.

  • 1 3/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon grated nutmeg
  • 1 teaspoon grated lemon peel
  • 1/4 cup ground almonds
  • 1/2 cup butter or margarine
  • 3/4 cup sugar
  • 2 eggs
  • 1 1/2 cups mashed banana (4 medium bananas)

Instructions:

  1. Preheat oven to 350 degrees F.
     
  2. Grease 9-inch by 5-inch inch loaf pan.
     
  3. Sift flour, baking powder, baking soda, salt, ginger, allspice and nutmeg together in bowl.

    - Use fresh flour or organic flour if it's in your budget. Over-processed, chemically treated and old flour will not produce quality bread like fresh, organic flour will.

    - Don't skip over the sifting process. It's important to incorporate all ingredients as much as possible! Sifting helps.
     
  4. Add lemon peel and almonds. Stir until combined. Set aside.
     
  5. Beat butter in large mixing bowl until soft and creamy.
     
  6. Beat in sugar until light and fluffy.
     
  7. Add eggs and beat until thoroughly blended.
     
  8. Beat in flour mixture alternately with bananas until mixture is well blended. Pour into prepared pan.

    - Mash ripened bananas with a fork.

    - Beat in only a handful of flour at one time. Use your whole arm to stir the bowl in a wide, sweeping motion.

    - Mix only until combined. DO NOT OVERMIX. There should be lumps. Overmixed dough will produce tough and rubbery bread.
     
  9. Bake in center of oven 1 hour to 1 hour 5 minutes, or until toothpick inserted in center comes out clean.

    - Breads require a specific oven temperature. Ensure you have preheated your oven properly and, in this case, station the bread in the center of the oven.
     
  10. Cool in pan on wire rack 10 minutes. Invert from pan and cool completely on rack.
     

Notes:

For variation, try banana-walnut or -pecan bread: Omit almonds. Add 3/4 cup coarsely chopped walnuts or pecans with bananas.
