Pumpkin Cranberry Bread combines several of our favorite fall ingredients into one delicious sweet bread recipe. Moist pumpkin bread is dotted with sweet-and-sour cranberries and gooey dark chocolate chips.

It's a fantastic flavor combination, and we think it's going to be a new autumn classic.

Serve this delicious cranberry pumpkin bread for breakfast, dessert, or a snack. It is really a great anytime treat.

Ingredients

  • 2 cups canned or fresh cooked pumpkin
  • 1 cup sugar
  • 1/2 cup milk
  • 2 eggs
  • 1/4 cup butter or margarine, melted
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1 cup frozen cranberries
  • 1/4 cup mini chocolate chips

Pumpkin Cranberry Bread Recipe

Instructions

  1. Preheat oven to 350 degrees.

  2. In a mixing bowl, beat pumpkin, sugar, milk, eggs and butter.

  3. In a separate bowl, combine dry ingredients, then stir into pumpkin mixture.

  4. Fold in cranberries.

  5. Pour into a greased 9x5x3-inch loaf pan.

  6. Bake at 350F degrees for 60 minutes or until toothpick inserted in center comes out clean.

  7. Remove from oven and top with chocolate chips.

  8. Cool in pan for 10 minutes; remove to a wire rack to cool completely.

This was interesting. When you cut into it, you almost think that the bread must not have cooked until you realize that you're looking at the pumpkin instead of the dough. I liked it! It was interesting to have these different textures involved in a loaf of bread. I haven't had that before. I could see this working well as a Thanksgiving or Christmas dessert since it incorporates a couple of different seasonal flavors.

This bread was really good! I enjoyed the gooey pumpkin filling and the bright flavor of the cranberries.
