Unstuffed Peppers
"Over the years the "classic stuffed peppers" recipe which my mother-in-law handed down to me has morphed into this quicker, slightly healthier, casserole version. I am far too lazy to actually stuff peppers. I have found that it is so much easier to just cut them into halves, clean them up and pop them on top, versus trying to cut off the tops and scoop out the seeds. The end result is every bit as tasty, maybe even more so. It's a true family favourite, which always has my kids asking for more."
