"Over the years the "classic stuffed peppers" recipe which my mother-in-law handed down to me has morphed into this quicker, slightly healthier, casserole version. I am far too lazy to actually stuff peppers. I have found that it is so much easier to just cut them into halves, clean them up and pop them on top, versus trying to cut off the tops and scoop out the seeds. The end result is every bit as tasty, maybe even more so. It's a true family favourite, which always has my kids asking for more."

This is an easy version of stuffed bell peppers without having to actually stuff entire bell peppers. By cutting the bell peppers in half and placing them on top of the rice filling, this saves preparation time. The casserole will definitely be enjoyed by the entire family.
