This cheesy and comforting pasta casserole is something you'll look forward to eating after a long day. It's a great recipe to make for the kids too (who doesn't love a cheesy spaghetti with bacon?) Keep this recipe in your back pocket, and pull it out whenever you need something that is easy and completely satisfying.

  • 8 ounces bacon, chopped
  • 1 pound spaghetti
  • 1 cup chopped onion
  • 1 red bell pepper, chopped
  • 1 (14-1/2-ounce) can diced tomatoes, drained
  • 2 cups chicken broth
  • 2 (10-3/4-ounce) cans condensed cheese soup
  • salt and fresh ground pepper to taste


  1. Preheat oven to 350 degrees F.

  2. Bring a large pot of water to a boil, add 1 Tablespoon salt and cook spaghetti until al dente, about 7 minutes or as package directs. Drain.

  3. Meanwhile, in a large skillet saut the bacon over medium heat until it is just beginning to crisp. Remove bacon with a slotted spoon and set aside. Pour out accumulated bacon fat, leaving about 1 tablespoon in the pan.

  4. Add onion and bell pepper into the skillet, return to medium high and cook, stirring frequently, until vegetables are tender, about 3 minutes. Stir in tomatoes, broth and soup, stirring until well combined. Add spaghetti and the reserved bacon, and season with salt and pepper to taste.

  5. If the pan you used is ovenproof you can simply smooth the mixture and place it directly into the oven. If not, pour mixture into a greased 9 x 13-inch baking dish. Bake for about 40 minutes.

Hmmmmm, bacon in spaghetti with cheese? I suppose my not being much of a bacon eater is probably why I think this recipe is so strange had me at Grandma so I'll have to give it a try. I think I'd also have to go in the direction of fettucini noodles Edmund, and I definitely think Velveeta would be wonderful in this recipe Collegegirl91...I was actually thinking of doing the same thing.

This is such a good family dish and it is quite quick and easy to make too which is always a winner with me, lol. We added grated cheddar cheese because, well, there can never be too much cheese now can there? And to save a few minutes I crisped the bacon in the microwave which the onion and pepper was cooking. We all loved it.

In terms of comfort food, this is a great change of pace from the usual macaroni and cheese I normally make. Anything combining bacon, cheese, and pasta is worth my consideration. Just as a matter of personal taste, I think I'd opt for using fettuccine in place of regular spaghetti. I just enjoy the thicker, flatter noodles. I might also add a can of the Ro-Tel tomatoes and chilies in place of the regular tomatoes just to give it some additional spice.

I love this simple pasta dish. The sauce could not be any easier to make. I think the bacon adds sucha strong and lovely flavor to it that grandma's signature dishes do.

Would love a few easy recipes for a group of say 20 people. The holidays are around the corner and I would like some fast and easy meals for lunch or dinner.

Condensed cheese soup? Would Velveeta work just as well?
