If you've ever tasted a cowboy casserole before, you know how extremely delicious it is. Made with ground beef, tater tots, sour cream and more, these beefy casseroles are comfort food defined. This Ultimate Cowboy Casserole recipe is no exception. We call it the "ultimate" because it really is one of the best cowboy casserole recipes we've seen. The tater tots are just the right amount of crispy and the beef tastes so deliciously juicy.

This cowboy casserole will keep your hunger at bay while becoming one of your new favorite dishes. This recipe is hearty enough to make for dinner any night of the week but budget-friendly enough that you'll actually want to. Who can resist the delicious blend of tater tots, ground beef, cheese and cream of mushroom soup all baked, warm, and gooey together in one casserole dish? We can't! Serve this meal all on its own or whip up a couple of tasty sides (cornbread, anyone?), and watch how quickly the "cows" come home to eat. Try it for dinner tonight and you'll be making it again soon after. It's that good!

Recipe CourseMain Course

Ingredients

  • 1 1/2 pound ground beef
  • 1 medium onion, chopped
  • 3 cloves garlic, chopped
  • 2 cups frozen corn
  • 1 can condensed cream of mushroom soup
  • 2 cups shredded Cheddar cheese
  • 1/2 cup milk
  • 4 tablespoons sour cream
  • 1 bag frozen tater tots (30-ounce)

Instructions

  1. Before cooking, allow tater tots to sit on the counter to defrost for an hour or so.

  2. In a large skillet cook the onion, garlic, and beef over medium high head. Cook until meat is no longer pink. until tender and translucent. Drain the mixture and place into a large bowl and set aside.

  3. In a small bowl combine the soup, milk and sour cream. Whisk until smooth. Add to hamburger mixture and stir to combine. Add corn and 1 cup of cheddar cheese. Gently mix to combine.

  4. Spray 9x13-inch baking dish with cooking spray. Layer half of the tater tots on the bottom, pour the hamburger mixture over the top and then layer with the other half of the tater tots. Top with remaining 1/2 cup cheese and bake for 25 - 30 minutes, or until golden brown and bubbly.

It's a side dish showdown! Which is better: biscuits or cornbread?

cornbread for sure!

We love biscuits!

Biscuits are best, they are great for so many recipes, i love them with soup, with jame or other spreads , but they are best fresh form the oven and smothered with bytter

It has to be biscuits! nothing beats fresh, hot biscuits and butter!

I love biscuits with every meal and as a snack. Just love!!

It depends on what you're having it with....soup needs cornbread..breakfast needs biscuits.

I super love both. But biscuits are probably the best (biscuits and gravy is the best).

Biscuits are the clear winner. They are more versatile and just more delicious in general. Plus, different people make cornbread in dramatically different ways, so you never know what you're going to get.

CORNBREAD

Biscuits are good, but cornbread is vastly superior.

Hoooooo, doggy! This is darn tasty. It was so delicious, I ate every last bite, and then I had to sit for a spell.
