If you've ever tasted a cowboy casserole before, you know how extremely delicious it is. Made with ground beef, tater tots, sour cream and more, these beefy casseroles are comfort food defined. This Ultimate Cowboy Casserole recipe is no exception. We call it the "ultimate" because it really is one of the best cowboy casserole recipes we've seen. The tater tots are just the right amount of crispy and the beef tastes so deliciously juicy. Try it for dinner tonight and you'll be making it again soon after. It's that good!

Ingredients

  • 1 1/2 pound ground beef
  • 1 medium onion, chopped
  • 3 cloves garlic, chopped
  • 2 cups frozen corn
  • 1 can condensed cream of mushroom soup
  • 2 cups shredded Cheddar cheese
  • 1/2 cup milk
  • 4 tablespoons sour cream
  • 1 bag frozen tater tots (30-ounce)

Instructions

  1. Before cooking, allow tater tots to sit on the counter to defrost for an hour or so.

  2. In a large skillet cook the onion, garlic, and beef over medium high head. Cook until meat is no longer pink. until tender and translucent. Drain the mixture and place into a large bowl and set aside.

  3. In a small bowl combine the soup, milk and sour cream. Whisk until smooth. Add to hamburger mixture and stir to combine. Add corn and 1 cup of cheddar cheese. Gently mix to combine.

  4. Spray 9x13-inch baking dish with cooking spray. Layer half of the tater tots on the bottom, pour the hamburger mixture over the top and then layer with the other half of the tater tots. Top with remaining 1/2 cup cheese and bake for 25 - 30 minutes, or until golden brown and bubbly.
