    Leftover Ham Jambalaya

    Throw in whatever you can find in this meaty jambalaya for a nice hearty leftover meal. It is perfectly seasoned and great for getting rid of some of your leftover ham for a fresh new dish. This is a great ham recipe for the family.

    Ingredients

    • 1 1/2 pound hot sausage
    • 3 tablespoons olive oil
    • 1 pound ham
    • 4 onions, chopped
    • 2 bell peppers, chopped
    • 1 can tomatoes
    • 6 cups chicken stock
    • 4 cloves garlic, minced
    • 4 bay leave
    • 1/4 teaspoon allspice
    • 1/4 teaspoon clove
    • 1/2 teaspoon thyme
    • 4 cups uncooked rice
    • 1 bunch green onions, chopped
    • seasoning salt, to taste

    Instructions

    1. Cut ham and sausage into small pieces and fry.
       
    2. Add onions, peppers and tomatoes. Cook 5 minutes.
       
    3. Add herbs, garlic and stock, cook 20 minutes, add seasoned salt and rice, cook until rice is almost done--then add green onions, finish cooking. Let stand 10 minutes before serving.
