The title says it all: this Jambalaya is quick and easy! Create a classic taste in half the time.

Serves: 8

  • 1 large onion, diced
  • 1 large green pepper, diced
  • 1 smoked sausage, cut into 1/4 slices
  • 1 tablespoon olive oil
  • 4 cups chopped cooked chicken
  • 3 cups uncooked long-grain rice
  • 2 cans French onion soup (10 1/2 oz), undiluted
  • 1 can chicken broth (14 1/2 oz)
  • 1 can beef broth (14 1/2 oz)
  • 2 teaspoons Creole seasoning
  • 2 teaspoons hot sauce
  • fresh cilantro sprigs, to taste

1. Saute first three ingredients in hot oil in a Dutch oven 4 to 5 minutes or until sausage browns. Stir in chicken and next 6 ingredients.
