Ingredients

  • 1 pound ground beef
  • 1 package (1.25 - ounces) ORTEGA Taco Seasoning Mix - Regular
  • 1 jar (16 - ounces) jar of Ortega Salsa
  • 2 cups shredded cheddar cheese
  • 1 cup sliced black olives
  • 3/4 cup sliced green onions
  • 1 package (16 - ounces) macaroni, cooked, rinsed and drained

Instructions

  1. Cook ground beef and seasoning according to taco seasoning package directions.

  2. Combine macaroni, salsa, ground beef mixture, cheese, olives and onions; mix well. Serve warm.

If you like macaroni salad, but are ready for a change from the traditional recipe featuring mayonnaise, this is for you. This "taco night" macaroni salad has the flavor of Mexican food. Besides having this as a main dish, this can also be a good side dish for a potluck. When making this, I would use lean ground beef, mild salsa, and reduced fat shredded cheddar cheese. Make sure that when you cook the macaroni, you drain it when it is al dente to ensure that the pasta is not overcooked.

Well it looks like I'm going to add this "Taco Night" Macaroni Salad to my Cinco de Mayo Taco and Burrito dinner tomorrow. I was going to just make a black bean salad on the side, but I can't resist how good this macaroni salad looks. The ingredients are simple and full of flavor, and the preparation is not complicated, I think this recipe will keep the Fiesta going.

This recipe sounds like a great compromise to the nights my kids want tacos, but I want to save a little on the grocery list. I like that the macaroni will make the meal go further and satisfy the craving for tacos at the same time. Throw in some taco sauce and sour cream and you have all the taco fixins.
