A Baked Breakfast Potato

Make your breakfast one to remember. Baked Breakfast Potatoes remind me of tater tots and french fries. This will definitely make your breakfast complete.

Ingredients

  • 1 tablespoon dried minced onion
  • 1/4 teaspoon black pepper
  • 1 can (12 ounces) Cream of Broccoli soup
  • 1 pint nonfat sour cream
  • 4 ounces lowfat sharp cheddar cheese, grated
  • 4 ounces fat free cheddar
  • 2 pounds potatoes, cooked and cubed
  • 1 cup corn flakes, crushed, for topping

Instructions

  1. In a large bowl combine all ingredients except the corn flakes.
     
  2. Mix well and pour into a 9 X 13 inch casserole sprayed with non-stick cooking spray.
     
  3. Sprinkle crushed corn flakes on top.
     
  4. Bake at 350 degrees F or 45 to 60 minutes.
     
  5. Makes 10 servings.

Why if so the potato,would be soaked in water?

Macaroni soup is always good and fast down at tables.First boil broken into small macaroni strings then boil with water .tomatopaste and sugar,vinegair and salt and add dry thyme.

Seems a bit strange that you would put "cooked" potatoes in the oven for up to an hour. Is it the intention of the recipe to make mush? It makes more sense to me to have partially cooked (parboiled) or even smaller cubes that are not cooked.

yes made with hasbrowns, cream of chicken soup, onions and corn flakes so much easier and I use the hashbrown with the onions and green peppers you can either bake or micro...good

Couldn't this be made using frozen hash browns?? Seems just like a recipe I have used for years with the frozen spuds!
