  • 1 (16.3-ounce) can flaky biscuits
  • 8 ounces turkey breakfast sausage
  • 2 tablespoons unsalted butter
  • 1 cup all-purpose flour
  • 3 cups whole milk
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon cayenne pepper


  1. Preheat the oven to 400°F and lightly coat a 7 x 11-inch baking dish with cooking spray.

  2. Cut the biscuits into quarters and place half of the biscuits in the baking dish. Bake for 10 minutes.

  3. While the biscuits are baking, brown the sausage in a skillet over medium heat until fully cooked. Remove and drain. Add the butter to the empty skillet and melt over low heat. Then whisk in the flour and cook for 2 minutes. Add the milk, salt, pepper, and cayenne, bring to a low boil, and cook until thick. Return the sausage to the skillet with the gravy and stir to combine.

  4. Pour the mixture over the biscuits and layer the remaining biscuits on top. Bake for 30 minutes, until the top of the casserole is golden brown. Serve.

There's something about the aroma of sausage and fresh biscuits baking to start off any day right, and regardless of how it's prepared, whether you use links, crumbles, traditional or turkey sausage hot or mild...just about everyone loves biscuits and gravy. For me the more pepper the better! This casserole dish is such a great idea and definitely less of a mess than the traditional way of eating it. I can't wait to try it, but think I'll do homemade biscuits instead of canned...either way, it's gotta be good!

I will never forget the first time I tasted Biscuits and Gravy. Being born and raised in New York I had never heard of such a thing so that first taste during a trip too the south was memorable. I am so thankful for this easy Grandma's Biscuits and Gravy Casserole recipe so I can re-create that wonderful meal in the comfort of my New York home. The only change I made to the recipe is that I use ground breakfast sausage, the picture looks like the sausage is in cut up links.

Then why would you even post?

Biscuits and gravy seem to be a regional dish. I know when my kids come back for a visit from out West where they live, they'll make a beeline for the local Hardee's to get some biscuits and gravy. The Libby's canned sausage gravy is really close to the taste of the Hardee's version, but this homemade version is one I definitely want to try. The spice mixture looks about right since my family likes the sausage gravy on the peppery side. I'd probably substitute regular sausage for the turkey version since that's what everyone is used to.
