I've made similar breakfast casseroles in the past and they've always gone over well. I usually add some diced pepper and onion to the hashbrowns before adding the other ingredients. I've not tried it with Canadian bacon but that sounds good. I've usually used sausage or bacon, and that's always turned out well. I also try to sprinkle some shredded cheese over the top right before the end of cooking, because a nice cheese crust is always good.

I love breakfast casseroles that you can make ahead of time. The mornings are often so busy on a holiday that it's easier to prepare the day before. I think I would try doubling it though for a 9x13. Has anyone done that successfully? Also I was thinking crumbled sausage would be nice in there as well or as a substitute for the Canadian bacon. It sounds delish!

We love "breakfast casseroles" for dinner! I have lots of recipes with hash browns, sausage, and eggs. I can't wait to try this one next week. I like that you can add in some favorite veggies. I also make recipes like this on holidays, but I don't have one coming up to cook for.

This recipe looks really delicious! This would be great for the holidays or to make ahead for a brunch or potluck. I would probably double or triple the recipe to feed a bigger crowd. This is a great way to use leftover veggies from your fridge, and I'm sure you could switch up the meat and cheese you use too. A little bit of red pepper flakes would add some nice heat to this casserole too. Yummy!

Yum! I love this dish. I really like that you can mix it up and put it in the fridge until the next morning when you want to bake it. This is the perfect size for my husband and I. Most recipes like this make a huge amount for a lot of people. If you have leftover ham, that is great to use.
