Pancake Tacos
They might not make sense, but pancake tacos are delicious!
If you love breakfast more than anything else, why not combine all your favorite breakfast foods for the ultimate morning feast?
This recipe takes eggs, potatoes, bacon, sausage, and even avocado, and wraps them up in different combos inside a warm and fluffy pancake! If you think this sounds awesome, that's because it is.
This is a really fun recipe to wake up to, so surprise your family with a pancake taco bar on a Saturday morning and make their day.
While we recommend toppings like salsa and hot sauce for these savory breakfast tacos, we feel like you could get away with pouring a drizzle of syrup on top instead if that's more your style.

Ingredients
- 1 cup flour
- 1 tablespoon sugar
- 2 teaspoons baking powder
- Pinch of salt
- 1 cup buttermilk
- 2 tablespoons melted unsalted butter
- 1 egg
- Nonstick cooking spray
- 8 slices cheddar cheese
- 1 1/2 - 2 cups cooked frozen hash browned potatoes
- 3 strips bacon, cooked and broken in half
- 3 sausage links, cooked and sliced
- 1/2 avocado, sliced or cubed
- 1 tablespoon unsalted butter
- 6 eggs, whisked
- Kosher salt and pepper to taste
- 4 green onions, sliced thin
- Hot sauce

Heat oven to 250 degrees F. Line 2 baking pans with parchment paper.

Place cooked hash browns, cooked bacon and sausage on one of the baking pans and place in oven to keep warm while you prepare the pancakes.

In a large bowl whisk the flour, sugar, baking power and salt. Whisk in the buttermilk, melted butter and egg, mix until combined.

Heat a large skillet over medium high heat, spray with cooking spray. Scoop ¼ cup of the batter for each pancake, cook 2-3 minutes then flip and cook for another 1-2 minutes until golden. Place cooked pancakes on the other baking pan and place a slice of cheese on top then transfer to the oven so the cheese melts.

In another skillet melt the butter and add the eggs and scramble until light and fluffy. Season with salt and pepper to taste.

Divide the scrambled eggs between the 8 pancakes, top with some hash browns, then place bacon in 3 of the pancakes, sausage in 3 of the pancakes and avocado in 2 of the remaining pancakes. Garnish with the green onions and serve with hot sauce.

These breakfast pancakes sound delicious. I have made savory pancakes before and filled them with ground beef topped with cheese sauce and that worked well so I think this breakfast would taste good too. I never thought of filling them with bacon and eggs etc. It's a great idea and can also be eaten on the go this way.

Hmmmmm, I think I'm a little on the fence with this recipe...I mean I love pancakes and would love to have tacos every day but cheese on a pancake? Maybe if the cheese were put directly into the eggs it wouldn't seem so strange to me. I do however think syrup would go really well with the sausage and bacon and the avocado sounds like it would go great with the eggs to replace the cheese. You can probably even do fruit pancake tacos too!

YUM! I never thought to make pancakes into a taco before, but I definitely will do this the next time I have breakfast leftovers and need a meal on-the-go.

I had no idea what to expect when I tried this, and overall it was pretty good! I love scrambled eggs, sausage and cheese together so that was a no brainer. The weird bit was the cheese on top of the pancake - it didn't taste bad, it was just weird. Overall... pretty tasty, actually, but I don't think I'll be combining my breakfast like this again. )
