My friends might think I'm weird, but one of my favorite snacks is liver pate on water crackers. This seems very old world and frugal - not wasting any parts of the animal. I have seen similar "sausages" in traditional Italian cuisine, and can remember Jacques Pepin doing something like this on a French cooking show years ago, making a roll inside plastic wrap and then wrapped in foil. I really would like to give this recipe a try!
