Blast from the Past Broccoli Bites are the perfect game day snack. These little breaded cheesy broccoli bites are a great appetizer for parties, holidays, and potlucks. You won't believe how quickly these little munchkins will disappear. You can choose your favorite dipping sauces, but we recommend honey mustard. The sweet and tangy sauce perfectly complements the cheesy broccoli and will satisfy all the guests at your party. Ingredients

  • 3 eggs
  • 1 cup shredded Colby cheese
  • 1 cup shredded Cheddar cheese
  • 1 (16-ounce) boxes frozen chopped broccoli, thawed
  • 6 slices bacon, cooked and crumbled
  • 1 ounce all-purpose flour
  • salt and pepper to taste
  • Italian breadcrumbs, as needed
  • oil for frying
  • prepared honey mustard sauce for dipping

Instructions

  1. In a large mixing bowl, place all ingredients except bread crumbs. Mix until all ingredients are well combined.  

  2. Refrigerate mixture for at least 1 hour.

  3. Heat oil in a large skillet over medium-high heat until oil reaches 350 degrees F.

  4. Pour breadcrumbs into a shallow dish.  Remove broccoli mixture from the fridge, and roll into 1-inch balls.  Roll each ball in the breadcrumbs.

  5. Fry balls in oil, turning as needed until golden brown all around.

  6. Drain on paper towels and sprinkle with salt. ​Serve with honey mustard dipping sauce.

We often host drinks parties for a local sports club and these were a HUGE hit at the event last weekend! I made 2 varieties - brocolli and cauliflower - and they all disappeared in double quick time. A really good snack, not at all difficult to make so this is going to be a regular go to recipe for me.

From time to time I will prepare a broccoli casserole and this sounds like this is the "finger food" version of it. I can't wait to try these at my next get together or maybe even for dinner this week end. If you have to get your veggies in, this is one way to do it

These broccoli bites are reminiscent of jalapeno poppers and maccheese bites. When you say, Blast from the past" I am thinking this recipe has been around for a while. No matter, it sounds quite yummy so it will go in the recipe box for next game day snacks.

I don't know about a "Blast from the past", but these Broccoli Bites will definitely be a part of my future. I am a big fan of vegetables, and I am always looking for different ways to prepare them. When I come across a recipe that turns vegetables into snacks, it truly makes my day. I am addicted to chips for snacking, and love the idea of a healthier alternative to quench the craving.

What a great way to incorporate broccoli into your day. Cauliflower would probably be just as yummy with this recipes as well. I really love broccoli and finding ways to make a snack out of it to avoid things like chips and such is definitely a plus in my world. These could be made in bulk and frozen for anytime you need a healthy snack. Do you think this recipe would bake well?

These look delicious and I'm always on the look out for some type of finger food for the weekend. I think if there was some sour cream around to dip these in, my family would get on board. I think Colby Jack cheese adds such a nice flavor to everything. I would consider leaving the bacon out of some of the mixture so my vegetarian daughter would eat them as well.

One of my husbands favorite foods is broccoli, add in his other favorites bacon and cheese, I believe we have a winner of a recipe. The only thing I am not real fond of is the fact that this is fried. I have never had much luck at frying things, I may try this out as a small batch baked.

Yum! I am always looking for snack type foods. Some days I just make snack food and have them as a meal. Broccoli would make it healthy, right? Bacon and cheese and broccoli is a great combination. You could even make these a head of time and store them in the freezer to make whenever you wanted.
