Been to Olive Garden many times and have not had this soup. It looks wonderful and the ingredients are right up our alley. Now all I need are the recipes for the bread sticks and the salad and we will feel like we are in Italy for sure.

Homemade Olive Garden Zuppa Toscana Soup is a great tasting soup from Olive Garden. I am so excited to make this. It looks like it can be ready within an hour. This dish is absolutely delicious! And the sauce takes on such wonderful flavors from the Italian sausage and the bacon. We had it for dinner yesterday and by the time everyone had had second, and even third, helpings until there was not a single bit of then dish left. It is really easy to make which is always great for a week night meal after having worked all day and quite economical too as one can add as much potato and spinach as you like. I have not been to Olive Garden in years and I have never had any of their soups. This sounds amazing! I am not usually big on spinach, but it pairs well with some other foods so I'd be willing to try it in this. I love that it isn't thickened with flour.

Because of the cream, you don't need a lot to fill you up, so if you're making this as an appetizer or first course, just start with a cup serving instead of a bowl. Now if you want, this can easily be the whole meal itself, maybe with a side salad to lighten and brighten the meal. When I first made it, I was so hungry and craving it at that time and I ate too much because it was so delicious and I was too stuffed!
