“better Than Cornbread” Crispy Spanish Corn Fritters

"These crispy Spanish corn fritters, known as tortitas crujientes de maiz, are possibly the best fritters ever. We’re talking a light crispy texture with a ton of delicious flavors, basic pantry staples, and all done in about 30 minutes. Serve them as a tapas appetizer or even as a side. Either way, they promise to fill you with goodness. To make the batter, I used a combination of all-purpose flour and yellow corn flour. You can also use cornmeal instead of yellow corn flour. As for the liquid, I used low-fat milk, but you can also use full-fat, nonfat, or even a plant-based milk."
