- 1 cup White Onion
- 2 cloves Garlic
- 1 cup Shredded Carrot
- 1 cup Celery
- 6 cups Chicken Broth
- 1/2 teaspoon Dried Thyme
- 1/2 teaspoon Dried oregano
- 1/2 teaspoon Dried Basil
- 1 teaspoon Salt
- 1 teaspoon Coarse Black Pepper
- 2 Chicken Breasts
- 16 ounce Gnocchi
- 1 cup Baby Spinach Leaves
- 1 cup Heavy Cream

In a large stockpot or Dutch oven, heat olive oil over medium heat. Saute onion soft and translucent; add the garlic and cook 1-2 minutes more, until garlic is fragrant.
