Ingredients

  • 2 pounds broccoli (or one large package), frozen
  • 4 skinless boneless chicken breasts
  • 1 cream of broccoli soup
  • 1/2 mayonnaise
  • 3 tablespoons melted butter
  • 1/4 cup heavy cream
  • 1 1/2 cup shredded Cheddar cheese
  • salt and pepper

Instructions

  1. Preheat oven to 350 degrees F.  Spray a 9x13-inch baking dish lightly with cooking spray. 

  2. Evenly spread frozen broccoli (no need to thaw) in the bottom of the baking dish.

  3. Top with the chicken breasts. Season chicken with salt and pepper.

  4. In a small bowl, mix the cream of broccoli soup, mayonnaise, butter and cream. Spread evenly over the chicken breasts. Top with shredded Cheddar cheese.

  5. Cover dish with foil and back 40-50 minutes until the chicken is cooked through.  Remove the foil and bake 5-10 minutes more until the cheese is bubbly and lightly golden.

Broccoli is my favorite vegetable so this Frugal Chicken and Broccoli Casserole was always going to be a hit with me. Fortunately the whole family enjoys it too and, because there was hardly any conversation during dinner, I know that everyone was happy with the dish. I added some crushed fresh garlic but otherwise followed the recipe as shown. It is really very good!

Guess what's for dinner tonight. All the ingredients are here except that I have thighs instead of breasts but that will make my husband happy. Always looking for something a little different for chicken besides pasta. and this surely fits the bill.
