Serves4 (about 1 3/4 cups each)

Ingredients

  • 3 cups chopped cooked chicken
  • 1 cup cooked rice
  • 3 hard-cooked eggs, chopped
  • 1 tablespoon chopped onion
  • 1 tablespoon lemon juice
  • 1 can (10 3/4 ounces) Campbell's® Condensed Cream of Chicken Soup
  • 3/4 cup mayonnaise
  • 1 cup grated Cheddar cheese (about 4 ounces)
  • ground black pepper to taste

Instructions

  1. Preheat the oven to 350 degrees F.

  2. Stir the chicken, rice, eggs and onion in a medium bowl. Stir in the lemon juice, soup, mayonnaise and cheese. Season with the black pepper. Spoon the chicken mixture into a 3-quart shallow baking dish.

  3. Bake for 45 minutes or until the mixture is hot and bubbling.

This sounds terrific, and I'm definately going to make it. I'll leave out the cheese, but I'll add a very generous handful of frozen peas & carrots. I'll top it with a mixture of Italian bread brumbs & the 'dry' Parmesan cheese, and lightly dot it with 'lite' margerine. I'll also use 'lite' mayo. I can't wait to try this!

To all who read my comment about cheese. Yes. I made it with homemade flavored bread crumbs. I also used 1 teaspoon of Bells Poultry Seasoning. It came out great.

Sound good I will have to try that for dinner for mine grand kids and see how well they like it for dinner.

add water chestnuts, artichoke hearts and toasted almonds. also instead of cheddar cheese, try a white cheese, feta, monterey, etc. or any mild cheese. An old favorite, sometimes vary with the above.

This the greasted casserole recipe that I ever made. I made it and took it my friends they had to have the recipe...I give it 5 stars......

Like many recipe sites, Campbell's have excellent recipes. But, answer me one question - why is everything made with cheese? I like a good macaroni and cheese as well as anybody else, but not cheese on everything I eat. I am going to try this without the cheese.

I have had this recipe for years but without cheese. It calls for crushed potato chips over top. I use unsalted.

Great Flavor,used left over rice and left out the egg as husband isn't fond of them. Thanks for all your recipes, it's easy to decide on supper.
