"Bring Home the Bacon" Budget Bake

"Bring Home the Bacon" Budget Bake is an easy ground beef casserole recipe that is cheap enough to make any night of the week and so tasty you won't be bored. This filling casserole recipe layers egg noodles, a creamy cheese mixture, ground beef and marinara sauce on top of each other for a filling casserole that is a great and wholesome weeknight meal. Baked some garlic bread and whip up a salad for an Italian-themed meal that costs a fraction of what you'd spend taking your family out to dinner.
Ingredients
- 1 pound bulk Italian sausage, browned and drained
- 1 (12-ounce) bag egg noodles, cooked and drained
- 1 jar marinara sauce
- 1 cup sour cream
- 2 cups cottage cheese
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon oregano
- 2 cups shredded Mozzarella cheese

Instructions

Preheat oven to 350 degrees F.

In a bowl, combine sour cream, cottage cheese, salt, pepper, and oregano.

In a baking dish, layer half the prepared egg noodles, meat, cottage cheese mixture, shredded cheese, and marinara sauce. Continue to layer with the other half portioned ingredients. End with a layer or marinara and top with shredded cheese.

Bake at 350 degrees for 20-25 minutes, until bubbly and golden.

This is such a great faux lasagna recipe that'll save you so much time, unlike the traditional version and it seems like it wouldn't be as heavy on the tummy either. Perhaps if you were to take some chunky tomatoes, and a medley of peppers it would be a great way to incorporate veggies plus add a little extra color and texture to the meal as well.

I LOVE this kind of meal. It is tasty and filling and we will definitely make it again. We did not have any mozzarella so used a combination of grated cheddar and emmentaler cheeses and the man of the house added chopped garlic. It is quick and easy to prepare and a very nice family meal.

Given the title, I was expecting to see bacon listed among the ingredients. But this is a really simple and tasty variation of lasagna, using egg noodles rather than the lasagna noodles. I would probably use one of the Prego sauces rather than a plain marinara sauce since I think the Prego sauces have a reasonably close to homemade taste. I think I might use one of the Chunky Garden varieties.
