Bisquick Zucchini Casserole

- 5 eggs, lightly beaten
- 1/2 cup vegetable oil
- 1/2 cup grated Cheddar cheese
- 1/2 teaspoon salt
- 1 teaspoon ground Italian spices (See note)
- 3 cups thinly sliced zucchini
- 1/2 cup finely chopped onion
- 1 teaspoon finely minced garlic
- 2 cups baking mix (i.e. Bisquick)
Preheat oven to 350 degrees F and spray a 9x13-inch casserole dish with cooking spray.
Whisk together the eggs, oil, cheese, salt, and spices. Add the zucchini and onion and toss to mix well. Add the baking mix and stir to combine until no dry mixture remains.
Spoon into the prepared casserole and smooth the top. Bake for about 30 minutes, until the top is golden brown and puffy.
Cut into squares to serve while warm or at room temperature.
If you have a premixed bottle of Italian spices that is the thing to use. If not, make a mixture of dried oregano, basil, and rosemary and use 1 teaspoon of this mixture.
This is a perfect dish to serve for brunch, as the centerpiece of lunch with a salad, or as a side dish at dinner. It travels well and would work well for a potluck as it does not need to be piping hot to be enjoyed.
