If you happen to be a tater tot fanatic who is also watching their weight, then this recipe for zucchini tots is going to be a lifesaver! Zucchini is a delicious vegetable to substitute into any recipe to make it healthy, and this zucchini tots recipe is almost texturally the same as potatoes. This recipe includes no fryer and no grease, so this is absolutely a guilt-free snack. Feel free to eat as many of these healthy tater tots as you'd like!

The best part? These zucchini tater tots honestly taste better than potato tater tots. Frozen tots definitely won't give you the shallots, Cheddar cheese, and Panko that this tasty zucchini recipe can provide. Kids and adults will both fall in love with this easy, delicious zucchini snack.

  • 1 cup grated zucchini
  • 1/2 cup shredded carrots
  • 1 large egg
  • 1 shallot, minced
  • 1/4 cup grated cheddar cheese
  • 1/3 cup Panko
  • 1/4 teaspoon kosher salt and black pepper to taste

  1. Preheat the oven to 400°F. Spray a baking sheet with cooking spray.

  2. Grate the zucchini and carrots.

  3. In a medium bowl, combine all of the ingredients and season with salt and pepper to taste.

  4. Using an ice cream scoop or tablespoon, place one scoop into your hands and pack the mixture together, forming a ball.

  5. Place on the cookie sheet and bake for 15 minutes, flipping over halfway through cooking, until golden brown and cooked through.

I'm a little biased when it comes to my tater tots...but having said that, I also avoid them because they aren't exactly the most healthy snack in the world and I am trying to watch my carbs. It's amazing how when you're in your twenty's you can literally eat anything...but once you get up there in age you come to realize, that just isn't the case any longer. I do love how colorful these tots are and the cheese inside will no doubt make them yummy, but do you think almond flour can be used instead of panko?

Why can't I save this recipe to my recipe box?

I recently have gained a great appreciation for alternate "tots" recipes, and these Zucchini Tots have gained a top position in my repertoire. They are so easy to make, love that they are baked and not fried, they taste great, and are so much healthier for you. You will be surprised what a big difference small changes in your diet can make. These Zucchini Tots deliver all the health benefits without sacrificing any of the flavor.

Honestly, I liked these a LOT better than frozen tater tots!
