If you're someone who loves the flavor of cabbage rolls, but is intimidated by actually making the little rolls, then this recipe is perfect for you.

You get all of the delicious flavor of cooked cabbage, but you'll use the shredded leaves in order to save you oodles of time. We actually like the texture of the shredded cabbage a little more in this recipe, as you don't have to cut through the tough cabbage leaves in order to enjoy the recipe.

Ingredients

  • 2 pounds ground beef
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 2 (15-ounce) cans tomato sauce, divided
  • 1 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon cayenne pepper
  • 2 cups cooked rice
  • 4 bacon strips, fried until crisp and crumbled
  • 1 medium head cabbage (approximately 2 pounds), shredded
  • 1 cup shredded mozzarella cheese

Cabbage Roll Casserole Recipe

Instructions

  1. Preheat the oven to 350 degrees.

  2. In a large skillet, brown beef and onion over medium heat. Once beef has browned and is almost completely cooked, approximately 5 minutes, add the garlic and cook another minute or two.

  3. Stir in one can of tomato sauce and seasonings. Bring to a boil.

  4. Stir in rice and bacon and simmer for five minutes.

  5. Place 1/3 of the cabbage in a 9 X 13 inch baking dish. Top with half of the meat mixture. Repeat layers.

  6. Pour your second tomato sauce can on top.

  7. Cover with foil and bake for 45 minutes.

  8. Uncover, top with cheese and bake until cheese is melted, about 10 minutes.

Oh yum. Such a perfect meal to make with leftovers from that Paddy's Day dinner. And I'm always looking for different one-dish casseroles that my kids will actually eat and don't all have "lasagna" in the title. Hehe. :)

I love this idea! Cabbage rolls are so good, but they take a lot of time to make. This easier version is the perfect solution.
