Ingredients

  • 1 (3-pound) bag of potatoes
  • 2 onions, chopped
  • 3 cups chopped Kielbasa
  • 1/4 cup canola oil
  • 2 large eggs
  • 1 cup milk
  • 1 1/2 teaspoon salt
  • 1 1/2 teaspoon pepper
  • 1 cup shredded Cheddar cheese
  • 1 green onion, chopped

Instructions

  1. Preheat the oven to 425 degrees F.

  2. Place potatoes in the pan and add milk, oil, eggs, onion, kielbasa, oil, seasoning, and cheese. Stir until everything is coated in the oil and seasoning. 

  3. Place in the oven and cook, stirring occasionally, for 40-50 minutes or until potatoes are tender

I am absolutely hooked on this Baked Potato Breakfast Casserole. Love that the ingredients are cut big and chunky (potatoes, kielbasa, onions), and then it's loaded with cheese, it doesn't get any better than this. I agree with Rnbowgrl about a few more eggs, I solved that by serving it along with fried eggs. Add some buttered toast and trust me, this breakfast will get you through the whole day.

As odd as it may seem, I am a morning person but I rarely prepare any breakfast. I know that breakfast is the most important meal of the day, but I usually grab a cup of coffee and that is it. However, with a recipe like this, that can all be in the past. Thanks for this breakfast casserole recipe.

I could eat potatoes for breakfast, lunch, and dinner every day. I love potatoes and I am constantly looking for ways to prepare them. This recipe sounds easy and delicious! I can not wait to try this one.

Baked potatoes are so delicious at breakfast time...or anytime for that matter, plus they're so much better for you than fried and I love that the skins are left on in this recipe. The onion might need to be chopped up a little smaller for my liking and I'm thinking maybe a few more eggs added would balance out the ratio in this deliciousness, but either way, I'm definitely a fan!

I bet these potatoes would be delicious for not only breakfast but also dinner! They would make the perfect side dish.
