These Easy Amish Breakfast Muffins couldn't be easier to make and will make your mornings a little bit sweeter! Made in a mini muffin tin, this is an easy Amish food recipe you can make for breakfast and easily take on the go! All you have to do is make your dough, which is simply sweetened with vanilla and sugar, and then dump your batter into a mini muffin tin and bake. Once these muffins are done, brush them with butter and dust them in cinnamon sugar and you're good to go! You could also make regular size muffins in a normal muffin tin if you want a larger muffin to start your morning. Just make sure to double the recipe!

Ingredients

  • 1 1/2 cup flour
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup sugar, divided (1/2 cup for dusting)
  • 1/3 cup oil
  • 1 egg
  • 1 teaspoon vanilla
  • 1/2 cup milk
  • 6 tablespoons melted butter
  • 1 teaspoon cinnamon (for dusting)

Instructions

  1. Preheat oven to 350 degrees F.

  2. In a mixing bowl, beat together ½ cup sugar, oil, egg, and vanilla.

  3. In another mixing bowl, combine flour, baking powder, salt.

  4. Add flour mixture and milk alternately to egg mixture, mixing after each addition, just until combined.

  5. Fill greased mini muffin cups 2/3 full with batter. Bake for 15-20 minutes or until done.

  6. Meanwhile, in a shallow bowl, place the melted butter. In another shallow bowl, combine the remaining ½ cup sugar and cinnamon.

  7. When the puffs are done, remove from cups, and while still hot, roll the tops in melted butter and then in the cinnamon sugar.

How much sugar to cinnamon ratio for the topping. They always leave something out.

I've been seeing a lot of these Amish recipes everywhere. I'm not sure exactly what it means, but these muffins look delicious!

These look like mini donuts - hope to make them soon. So, as there are many configurations for mini muffin/cupcake pans, can someone give me an idea how many this is going to make? I just made the Early Riser Apple Cream Cheese Cake and the 9x13 recipe also had 1 1/2 C. flour and made a LOT of batter. BTW, it is delicious!!! The picture here shows more than 12. These recipes always leave something out or ingredients don't match the instructions (as in the Apple Cake anyway).

These muffins look so light and airy and with the ingredients inside of them, I'm thinking maybe a cross between cinnamon rolls and snickerdoodles? If you want a little sweetness you can add some streusel to the top of the muffins before baking or I'm betting this recipe would make a wonderful loaf cake. Me personally, I love raisins in my cinnamon rolls or muffins for that matter...just plump them up before adding them so they'll be nice and juicy.

OMG these Easy Amish Breakfast Muffins are absolutely the best. They truly are easy to prepare, and have just the right amount of sweet to satisfy your cravings. I love that they are mini, but I think I am going to try making s batch of regular size just for the shear indulgence.

These muffins certainly do look easy. What a great idea. I love the cinnamon sugar topping. Mini muffins are also a good idea as you can eat them on the go which always suits me in the mornings! You also don't need that many ingredients to make these and I usually have all of these in the cupboard at any given time.

This were fabulous! Dessert for breakfast is kind of a guilty pleasure of mine, but when they're mini, it's not so bad, right?

I am a fan of all things muffins. I like them mini and giant, sweet and savory, warm or fresh out of the fridge. This recipe sounds a little of the less sweet side, what I am aiming for right now because of my love of muffins. Thanks for the recipe.
