Cooking Time10 min
Cooking Vessel Sizecookie sheet
- 8 pineapple rings, drained and patted dry with a paper towl
- 1 onion, cut into 1/2-inch rings, use rings to fit pineapple
- 16 slices bacon
- 4 Mozzarella string cheese sticks
- 1/4 cup brown sugar
Preheat oven to 425 degrees F. Line a cookie sheet with aluminum foil and top with a wire rack. Spray rack lightly with cooking spray. Set aside.
Place an onion ring down on the cutting board. Press a pineapple ring inside. It should fit snuggly. Pull apart one string cheese, and lay half of the ring into the onion ring on top of the pineapple, pressed to the sides of the onion.
Carefully wrap two slices of bacon around the rings, going through the center hole, covering the entire onion-pineapple ring, sealing in the cheese. Sprinkle brown sugar over the tops of each ring.
Place on the wire rack, and place in the oven. Bake for about 10 minutes until the bacon is cooked and crispy. Allow to cool on the rack for 2-3 minutes and serve immediately.
