Ingredients

  • 8 pineapple rings, drained and patted dry with a paper towl
  • 1 onion, cut into 1/2-inch rings, use rings to fit pineapple
  • 16 slices bacon
  • 4 Mozzarella string cheese sticks
  • 1/4 cup brown sugar

Instructions

  1. Preheat oven to 425 degrees F.  Line a cookie sheet with aluminum foil and top with a wire rack. Spray rack lightly with cooking spray. Set aside.

  2. Place an onion ring down on the cutting board. Press a pineapple ring inside. It should fit snuggly. Pull apart one string cheese, and lay half of the ring into the onion ring on top of the pineapple, pressed to the sides of the onion.

  3. Carefully wrap two slices of bacon around the rings, going through the center hole, covering the entire onion-pineapple ring, sealing in the cheese. Sprinkle brown sugar over the tops of each ring.

  4. Place on the wire rack, and place in the oven. Bake for about 10 minutes until the bacon is cooked and crispy.  Allow to cool on the rack for 2-3 minutes and serve immediately.

Hmmm, this is different. Everything in this recipe sounds like it shouldn't go together in my world but it's just one of those things that regardless of how weird it may seem you just have to try it. I bet you could probably freeze these, dredge in breadcrumbs, fry, and then eat with a marinara sauce...I'm thinking it would be kinda like a pizza appetizer with a twist?

I love the combination of savory and sweet flavors in this appetizer! Even though it requires some assembly and prep time to make them, I will surely give them a try! Bacon and pineapple are two of my favorite pizza toppings. It would be a really fun thing to do in the kitchen with the kids!

This is one of the most interesting recipes I've seen in a long time. With only five ingredients, this is a quick and simple recipe. The pineapple is tart, the brown sugar is sweet, the bacon is salty, the onion gives it some crunch, and the cheese is a nice contrast with a soft texture. Definitely a party in your mouth!
