I love recipes that can be ready in less than an hour for those crazy weeknights. I also love the idea of being able to cook one of our favourite chinese take-out dishes at home! This looks easy, simple to make and very nutritious! I'm sure you could add in whatever vegetables you have on hand and suit the tastes of your family. I'll be making this one for sure, it's sure to become a family favourite!

Im not a vegetarian but I do like to serve up at least one meat-free meal per week. It certainly helps to keep us from blowing the budget with the ridiculous prices of meat, plus we all know the benefits of loading up your plate with lovely fresh vegetables. Plus its one of those recipes that can be cooked up in one pan and Im always a big fan of those.

This looks delicious! I'm always on the look out for simple and tasty vegetarian recipes. We've made something similar using whatever leftover veggies we had in the refrigerator. A recipe like this is also good the second day as leftovers when the sauce has been soaked up into the noodles. I like to take the leftovers to work for a quick meal at my desk. Thanks for sharing.
