Zucchini is a fantastic vegetable to eat on its own, but when it's stuffed with things like cheese, tomatoes, and (best of all!) bacon, it's utterly irresistible. Bacon Stuffed Zucchini Boats will make you go crazy for stuffed zucchini recipes. Plus, you won't believe how easy this one is - just prepare the filling, put it in the zucchini boats, and bake. You can make this as either a main dish or a side. And, of course, you can take the bacon out to make it a vegetarian dish if need be. You won't want to go back to regular zucchini after trying these stuffed zucchini boats.

My mouth was watering just reading this recipe. Such a great combination of flavors. I love the versatility of this recipe. Once you have the technique, you can add any combination of ingredients that you like. I added mozzarella to the top of this during the last few minutes of baking...YUM!

Whoa these sound incredible! I've never had zucchini and bacon together before but at least this sounds like a healthier way to indulge with bacon!
