Split Pea Soup
"Carrot, ham and split peas come together with chicken broth to make this flavorful, creamy soup. It is the perfect way to warm up on a cold winter day. This soup seriously tastes like it has been simmering all day but it really cooks in less than an hour! Start by sauteeing diced carrots, celery, and onion in a bit of olive oil. After about 5 to 10 minutes, when the onion is translucent, add chicken stock, water and dried split peas. There is no need to presoak the split peas."
