Tomato Zucchini Stew

When summer's bounty yields zucchini and tomatoes, this will be the perfect recipe for you to make! Tomato zucchini stew is easy, hearty, and tasty, and the whole family will love it...even the pickiest of eaters!


For more liquid, add tomato juice (and I would use garlic cloves instead of garlic salt, if you like garlic).

  • 1 1/4 pound mild Italian sausage, casings removed
  • 1 1/2 cup sliced celery
  • 4 cups fresh tomatoes, cut in wedges (save juice) or 2 (28-ounce) cans tomatoes
  • 1 1/2 cup tomato juice
  • 1 1/2 pound zucchini, cut into 1/4-inch slices
  • 2 teaspoons salt
  • 1 1/2 teaspoon Italian seasonings
  • 1 teaspoon sugar
  • 1/4 teaspoon garlic salt
  • 2 green peppers, cut into 1-inch pieces
  • shredded mozzarella or grated Parmesan or Romano cheese, for garnish


  1. Brown sausage in large, deep saucepan.
  2. Add sliced celery and cook for 15 minutes. 
  3. Drain off fat. Add tomatoes, tomato juice, zucchini and seasonings.
  4. Simmer, covered for 20 minutes.
  5. Add green peppers, summer an additional 15 minutes.
  6. Garnish with cheese.  Serve with French bread.
