Country Chicken Stew

Ingredients

  • 2 slices bacon, diced
  • 1 medium onion, sliced (about 1/2 cup)
  • 1 can (10.75-ounces) Campbell's Condensed Cream of Chicken Soup
  • 1 soup can water
  • 1/2 teaspoon dried oregano leaves, crushed
  • 3 medium potatoes, cut into 1-inch pieces (about 3 cups)
  • 2 medium carrots, sliced (about 1 cup)
  • 1 cup frozen cut green beans or fresh green beans
  • 2 cans (4.5-ounces each) Swanson Premium White Chunk Chicken Breast in Water, drained
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Cook the bacon in a 10-inch skillet over medium-high heat until crisp, stirring often. Remove the bacon from the skillet and drain on paper towels.

  2. Add the onion to the skillet and cook until tender, stirring occasionally. Stir in the soup, water, oregano, potatoes and carrots and heat to a boil. Reduce the heat to low. Cover and cook for 15 minutes

  3. Stir the beans in the skillet. Cover and cook for 10 minutes or until the vegetables are tender. Stir in the chicken, parsley and bacon and cook until the mixture is hot and bubbling.

Mmmmm country chicken stew sounds so enticing. What I like about this recipe is that it doesn't seem too much trouble to prepare. it is also quite a healthy meal, looks delectable and I could eat it right now. I like the fact that there are green beans in it. I would serve this with rice.

I never loved green beans so to get me to eat them more, my mom started chopping them into very small pieces and throwing them into all our stews. It worked and after some time i enjoyed the taste when mixed with some ground beef or chicken. This recipe is the best one that incorporates fresh vegetables and it goes well with some rice or chapati.

I like potatoes in soup too, sometimes even sweet potatoes, especially in barley soup with mutton. Soups are great and easy to make. I tried a split pea and vegetable soup a few times and it was perfect for late dinners as it was low-fat and also low-carb. It was great for losing weight!

The Country Chicken Stew is a quick and easy recipe that takes only 40 minutes from start to finish. Has great ingredients and will be good to use leftover chicken. Stews are always good on cold days in the winter so I would call this a good winter recipe. This will be made in my kitchen real soon.

Yummy what a lovely soup. I'm definitely going to be making this. I love everything in it, especially the bacon base. That is always a good idea for a depth of flavor. I also like the way it contains potatoes. I like potatoes in a soup. This is so healthy too. Definitely a good start to summer!
