Cheater's Chicken Soup

Get full flavor for half the work with this Cheater's Chicken Soup recipe! The "cheating" part comes in because you use a store-bought rotisserie chicken, but the rest of the recipe is up to you! If you're looking for chicken soup recipes that taste great but won't keep you in the kitchen for hours, this dish is for you!

For extra heartiness, add rice to soup.  If adding rice, wait until the water is boiling, and then add your desired uncooked rice.  By the time the vegetables are cooked the rice should be done as well.



 



 

Ingredients

  • 1 rotisserie chicken
  • variety of vegetables (celery, carrots, cabbage, potatoes, corn, zucchini, cilantro, and onions)
  • Bouillon cubes or chicken broth
  • For garnish: Cilantro and limes

Instructions

  1. Put a pot of water on to boil or start boiling the chicken stock.

  2. While the water is warming up, chop all the vegetables.

  3. Once the water is at a rolling boil add bouillon cubes or powder. If using store bought chicken stock, skip this step.

  4. Add all vegetables to the boiling liquid.

  5. Pull all meat off the rotisserie chicken. Add the chicken to vegetables and broth, place lid on the pot, and let it all simmer until the vegetables are soft. This takes around 15-20 minutes depending on how thickly you chopped your veggies.

  6. Add cilantro and lime to top, if desired.

I make chicken soup like this in a cup rice pot I take the breasts off and cut them in half and put each in a container and put the containers in the freezer for sandwiches later or to put in another chicken soup pot or any other meal containing some chicken I take the a leg an thigh and put them in containers in the freezer also two more meals I put the carcass with wings and any juices in the container in the pot with water and a won ton soup powder and set the rice pot on cook While that is cooking I dice an onions and cut up carrots and celery By that time the chicken is read to debone I cut all the meat up into cube size pieces put into pot and add more water to the broth Then add veggies cooking until they areRead More soft Add garlic powdered onion salt pepper oregano and parsley We either usually eat it with clear noodles The removable pot can be put in fridge for next meal We do not put rice in pot as it will suck up all the broth If we want rice we use a smaller rice pot to make rice in for the meal and store it separately in the fridge We can usually get meals for two of us out of one pot and then multiple meals out of the parts put in the freezer
