Stay Fresh Banana Bread

For an easy banana bread recipe, try the stay fresh banana bread. The moist, spongy bread tastes great for days. You'll enjoy a homemade baked good for longer with this basic banana bread recipe.

Notes

This is a very moist, spongy bread that stays fresh several days if stored airtight.

Cooking Time40 min

Ingredients

  • 1 1/4 cup all-purpose flour
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 cup solid vegetable shortening
  • 2 fully ripe medium bananas
  • 2 eggs

Instructions

  1. Sift dry ingredients into bowl.
     
  2. Whirl remaining ingredients in blender.
     
  3. Add to dry ingredients and mix just until dry ingredients are moistened.
     
  4. Spoon into lightly buttered and floured 9" square pan and bake in moderate oven, 350 degrees F, 35 to 40 minutes.
     
  5. Remove from oven; let stand 5 min.
     
  6. Loosen edges with spatula and turn out onto cake ralk.
     
  7. Covered with waxed paper.
     
  8. Cool to room temperature before cutting in squares.
