Zucchini bread is always a refreshing snack or treat but this recipe creates a real pick-me-up. By using great ingredients like cinnamon, walnuts and lemon rind, Zesty Zucchini Bread delivers a wonderful dish.

  • 3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 tablespoon cinnamon
  • 3 eggs
  • 1 3/4 cup sugar
  • 1 cup vegetable oil
  • 2 teaspoons vanilla
  • 2 zucchini, shredded (about 2 cups)
  • 1 tablespoon grated lemon rind
  • 1/2 cup chopped walnuts (optional)


  1. Sift together the flour, salt, baking powder, baking soda, and cinnamon.
  2. Beat eggs lightly in a large bowl.
  3. Stir in sugar, oil, vanilla, zucchini, and lemon rind.
  4. Add flour mixture, blending thoroughly. Stir in nuts (optional). Spoon batter into 2 well greased 8.5'' x 4.5'' x 2.5'' pans.
  5. Bake at 350 degrees F for 50 minutes.
  6. Cool 10 minutes and remove from pans.

I can not find my tried and true zucchini bread recipe that has been in the family for years. I've been searching online and this is quite close to the one I love. I'll be trying this out this week! I'm happy to have grown my own zucchini after a few years. I have missed having a nice moist bread.
