Amish Potato Salad Recipe

Ingredients

  • 1 pound russet or Yukon gold potatoes, peeled, cubed, and boiled
  • 2 hard-boiled eggs
  • 1/4 cup finely minced shallots
  • 1/4 cup chopped celery
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1/4 teaspoon celery seed
  • 1/2 teaspoon kosher salt
  • 2 tablespoons sugar
  • 1/4 teaspoon black pepper

Directions

  1. In a medium mixing bowl combine the cooked potatoes, chopped hard-boiled egg whites, shallots, and celery.

  2. In a small mixing bowl mix together the hard-boiled egg yolks, mayonnaise, sour cream, Dijon, apple cider vinegar, celery seed, sugar, salt and pepper. Mix well. Add the mixture to the potatoes and mix to coat.

  3. Chill for 30-60 minutes.

My friend made this potato salad for a recent potluck and it was so good! I went back for seconds :) I normally only eat my mom's famous potato salad, but this one is a close second!
