1. Bacon-Ranch Potato Salad (with Homemade Buttermilk Dressing)
For the Dressing
2/3 cup mayonnaise
1/4 cup buttermilk
2 tablespoons cider vinegar
2 tablespoons chives, chopped
1 teaspoon sugar
1 minced garlic clove, chopped
Salt and pepper to taste
For the Potato Salad
1/2 cup celery, chopped
2 scallions, chopped
2 pounds boiled, cubed red potatoes
6 slices cooked bacon, crumbled
Instructions
1. In a small bowl, whisk together mayonnaise, buttermilk, vinegar, sugar, garlic, chives. Season with salt and pepper to taste. (This is your dressing).
2. In a large bowl, combine potatoes, celery, scallions, bacon and dressing. Mix well.
3. Taste and season with salt and pepper as desired.
2. Very Veggie Potato Salad
Ingredients
2 pounds red potatoes, boiled and sliced
1 carrot, sliced
1 cup radishes, sliced
1 English cucumber, chopped
3 scallions, chopped
1/2 cup flat-leaf parsley, chopped
1/4 cup chives, chopped
1/2 cup mayonnaise
1/4 cup white wine vinegar
salt and pepper
Instructions
1. In a small bowl, whisk together mayonnaise and vinegar. Season with salt and pepper to taste.
2. In a large bowl, add all ingredients and dressing. Mix well.

For the Dressing
1 cup Greek yogurt
1/4 cup olive oil
salt and pepper, to taste
For the Potato Salad
2 pounds boiled cubed Yukon Gold Potatoes
1 cup English cucumber, chopped
1/2 cup crumbled Feta cheese
1/4 cup red onion, sliced
3 tablespoons fresh mint, chopped
2 tablespoons fresh oregano, chopped

1. In a small bowl, whisk together greek yogurt and olive oil. Add salt and pepper to taste.
2. In a large bowl, toss together all ingredients and mix well.
4. Broccoli-Cheddar Baked Potato Salad
Ingredients
1 pound warm baked russet potatoes
1/4 cup butter, softened
1/4 cup sour cream
4 slices cooked and crumbled bacon
3 tablespoons chives, chopped
additional sour cream to taste
salt and pepper
1 cup cooked broccoli, chopped
1 cup shredded Cheddar cheese
Instructions
1. In a large bowl, smash potatoes with butter and sour cream.
2. Add bacon, chives, broccoli and Cheddar cheese.
3. Season with salt and pepper.
4. Add additional sour cream for a creamier texture.
