This tortellini with pesto is one of our favorite anytime meals, and it will be one of yours too!

Comforting and fresh, this pesto tortellini is an ideal dish for serving to friends and family (or just to yourself!). You'll love the combination of bright basil, rich walnuts, and irresistibly nutty Parmesan cheese in this pesto sauce. Yes, this tortellini with pesto uses walnuts instead of pine nuts. This swap makes your shopping list that much easier to handle. Add in a package of premade cheese tortellini, and your dinner just got easy as well as elegant (and delicious). Ingredients

  • 2 cups fresh basil leaves
  • 1/2 cup grated Parmesan cheese, plus extra for serving
  • 1/2 cup olive oil
  • 1/3 cup walnuts
  • 4 garlic cloves
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1 (9-ounce) package tortellini

Instructions:

  1. Combine the basil, Parmesan cheese, oil, walnuts, garlic, salt, and pepper in a food processor. Blend until smooth, about 2 minutes, stopping halfway through to scrape down the sides of the bowl.

  2. Bring a large pot of water to a boil. Add the tortellini and cook until al dente. Drain and return to the pot. Add the pesto and stir to coat. Serve with extra Parmesan.

I love pasta in pesto and I usually use penne. There's just something in the penne shell which makes eating pasta in pesto so exciting. Nevertheless whatever shell is used for pasta like this Pesto Tortellinin makes me crave for pasta in pest. Cheers!

My mouth was watering. just reading this Perfect Pesto Tortellini recipe, so you know I had to make it. I am so glad I did, for a number of reasons. It is so easy to make, and filled with flavor. I also love the use of walnuts, instead of pine nuts...makes it more budget friendly. There is nothing better than homemade pesto.
