Lemon Balm Muffins

Ingredients

  • 2 cups flour
  • 1 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup sugar
  • 1 tsp lemon zest
  • 2 eggs
  • 1/2 cup applesauce
  • 1/2 cup lemon juice
  • 3 tbsp fresh minced lemon balm

Instructions

Spray muffin tins with nonstick cooking spray. Blend together dry ingredients. In another bowl, whisk the eggs until well beaten, then add applesauce, lemon juice, and lemon balm. Add to dry ingredients and mix well. Drop into muffin tins and bake at 375F for 20-25 minutes. Serve with rose butter, if desired
