Ingredients

  • 1 cup Grits, not prepared
  • 3 cups Water
  • 1 cup Milk
  • 1/4 cup Cheddar Jack Cheese
  • 2 large eggs
  • 1 teaspoon Pepper
  • 1 teaspoon Salt
  • 2 tablespoons Chopped Green Onion
  • 6 large strips of bacon, chopped
  • 8 ounces Spicy Sausage, crumbled

Grits n' Sausage Morning Muffins

Savory Morning Muffin Recipe

  1. Preheat oven to 415 degrees F.

  2. Cook bacon and sausage. Drain excess grease and set aside.

  3. Bring water to a boil in a medium sauce pan. Add one cup of grits and cook for about 6 minutes.

  4. Add cheese and mix until it's completely melted.

  5. Add milk, eggs, pepper, salt, green onion, cooked bacon, and cooked sausage.

  6. Spray mini-muffin pan with cooking spray.

  7. Scoop mixture into each muffin pan, filling each spot about 3/4 full.

  8. Cook for 30 minutes or until a fork is inserted and comes out relatively clean.
    Let cool slightly before eating.

I do not think I have ever seen grits cooked into a baked good. I have to admit, I love my grits in the morning but they are usually served in a bowl and a dab of butter. This is a different muffin dish for sure. More on the savory side and I think I will try it at least once.

So I am a GRITS and I had to click on this recipe just for curiosity. It is a fact that sometimes when you do not have a lot you learn how to put stuff together to make something good. This recipe sounds like that could have been the case. Not sure if I will like it but all of the ingredients make up a good southern breakfast so I have to give it a shot.

Until I watched the video all I could think of was how in the world are grits going to work in a muffin. But it's not like your traditional muffin at all and could very well be my go to breakfast from now on. I just love how simple and super hearty it is and it's got a lot of my favorite breakfast goodies packed into such a little package. Definitely gotta try this one!

I'm always looking for breakfast recipes I can make ahead that will last all week. This one looks absolutely delicious! Meaty, cheesy, and awesome!
