I agree that there is nothing better than a one pot meal for dinner after a long day! I made this dish with beef and also with ground turkey and it was delicious each time! I also love dishes like this because they help clean out the fridge!! You can mix and match ingredients to make a new combination every time!

One pot meals are the greatest thing ever! Not a fan of instant rice and that is what it is made to use. I buy white rice in bulk. It also cooks quicker than brown rice. It works. You may need to add a little extra time, but not a lot. If you use brown, it takes a super long time to cook. I leave out the corn. Next time I am going to try quinoa instead of the rice. I love quinoa.

This sounds fantastic. Looks pretty darn tasty, too! Definitely will be trying this one later.

I am betting this is delicious...and would even be good made with beef. This is definitely on my try list! Has anyone tried making it with beef?

I just bought a skillet (so I can spend less time on dishes) and this is on the top of my to-make list!
