Baked Potato Taco Boats are what's for dinner tonight -- or at least they should be! These delicious baked potato-style tacos bring great flavor to the table, while being equally easy to prepare. Your kids will look forward to this meal every time you make it. Enjoy your favorite taco meat inside a baked potato "shell," and get creative with the rest! Fill the shell up with everything you love most about tacos. Just make sure you don't leave out the shredded cheese and sour cream because, if you're like us, you think those are some of the best parts of a delicious taco meal!

Ingredients

  • 3 baked potatoes, cooled
  • 1 1/2 cup prepared taco meat of your choice
  • 3/4 cup shredded Mexican blend Cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup shredded Mozzarella cheese
  • Optional Garnish
  • diced tomatoes
  • shredded lettuce

Instructions

  1. Preheat your oven to 350 degrees F.

  2. Cut potatoes in half lengthwise and remove most of the insides, reserving them in a bowl.

  3. Add the removed potato to the taco meat.  Add Mexican cheese and sour cream.  Stir well to combine.

  4. Divide among the potato boats and top with the mozzarella cheese.

  5. Bake in the oven until heated through and cheese is bubbly and lightly golden.

Another great weeknight dinner recipe courtesy of Recipe Lion. These Baked potato Taco Bites are quick and easy to put together, and full of great Mexican flavor. I like topping them with chipped tomato, shredded lettuce and a dollop of sour cream. Served with a tossed green salad, and kernel corn on the side, and dinner is complete.

Taco in a potato...what a great idea this is. I love everything about tacos and being able to try different ideas makes the norm so much more interesting. The potatoes will make it a lot more hearty too. Instead of mozzarella cheese though...I'm thinking salsa, cilantro and some Queso Fresco to bring it all together.
