Flavor Variation:
For a Cheesy Enchilada, omit the chicken and use 1 cup cheese. Place 3/4 cup cheese down the center of the tortilla. Top with half the enchilada sauce. Roll up the tortilla and place seam-side down onto a microwavable plate. Top with the remaining sauce and cheese. Microwave as directed above.

- 1/2 cup shredded cooked chicken or pork
- 1 flour tortilla (10-inch), warmed
- 1/2 cup prepared enchilada sauce
- 1/2 cup shredded Cheddar Jack cheese

This 5 Minute Cheesey Chicken Enchilada Grande seems a quick meal to make for my children however because of the cheese ingredient, they will not appreciate this very much. My children never liked cheese a lot while growing up.

Wow, this is a quick recipe! I always order chicken enchiladas at Mexican restaurants, so I will be trying this recipe. I think I'll have it as an option when we have chicken tacos. I will put olives and sour cream and guacamole on mine! I'll probably have the chicken cooking in my slow cooker with enchilada sauce all day while we're at work.

So simple and looks delicious! Would this work with corn tortillas instead of flour tortillas for the gluten sensitive?

Corn tortillas would work. However, they don't come in large sizes, that I know of so you would make more smaller ones. You can find gluten free flour tortillas, which are a big size. They don't roll as easy so you might want to warm those up before folding up. You might find those in the gluten free section, either on the shelf or in the freezer.

I love the 5 minutes prep time! It's perfect for nights when you have to rush the kids off to an activity. I added some canned corn and chopped zuchinni to the chicken to increase the nutritional value a bit.
