Cheesy Mexican Meatballs Recipe

Ingredients
- 1 (10-ounce) can red enchilada sauce
- 1 pound ground beef
- 1 cup oats
- 2 eggs
- 1 packet taco seasoning
- 2 cups Cheddar cheese, grated
- cilantro, for garnish
Mexican Meatballs

Preheat oven to 350 degrees. Grease a 9 x 13”-inch baking dish.

Mix ¼ cup enchilada sauce, ground beef, oats, eggs, and taco seasoning.

Form meatballs by hand and place in the baking dish.

Pour remaining enchilada sauce over meatballs. Cover with foil and bake and bake for 30 minutes.

Uncover and sprinkle cheese over meatballs. Bake for 10 more minutes or until cheese is melted.
