Ingredients

  • 4 -6 (8-inch) flour tortillas
  • 1 pound ground beef
  • 1 envelope taco seasoning mix
  • 1 (14-ounce) can refried beans
  • 2 -3 cups shredded sharp cheddar cheese

Instructions

  1. Brown the ground beef until no longer pink and drain off fat.

  2. Mix in the taco seasoning mix with water as directed on back of packet. Cook as directed.

  3. Heat a large skillet over medium-high heat.

  4. Empty refried beans into a medium bowl and heat in the microwave for 1 minute. Spread 1 heaping tablespoon of beans onto a tortilla.

  5. Spoon taco meat onto one half of the beans. Cover with shredded cheese. Fold tortilla over (in half) and heat in skillet for 1 minute or so, long enough to lightly brown and warm the tortilla. Flip it over with a spatula and brown the other side.

These are really simple and tasty. I usually add some pico de gallo to the quesadillas I make, plus some sliced jalapenos. Meat, beans, and cheese are the basic ingredients for me, and I do like to add other things. I almost always serve these with a side of salsa, and some sour cream if I've gone a bit overboard on the spiciness.

Hmmm, I'm not a cowboy but I'm really loving this quesadilla recipe and can't wait to give it a try. So perfect for snacking on those busy days when I want something light but fulfilling at the same time. I might even try using black beans instead of refried, mixing them in with the taco meat and then throw in a little salsa for a nice kick. Yum!
