Cowboy Quesadillas

When you want an easy "Wild West" recipe to prepare for the hungry cowboys at your dinner table, try this quick fix Cowboy Quesadillas recipe. It's lightning fast to prepare and guaranteed to have them licking their plates clean. Made with just a few simple ingredients, this Mexican-inspired meal is one of those easy dinner recipes you'll find yourself making on more than a few weeknights because it's just so delicious. Make 'em tonight and you'll be more than satisfied!


The number of quesadillas this recipe will yield depends on how hearty you like them. Some people enjoy more meat, while others like to pile on the cheese. Ingredients list is approximate.




  • 4 -6 (8-inch) flour tortillas
  • 1 pound ground beef
  • 1 envelope taco seasoning mix
  • 1 (14-ounce) can refried beans
  • 2 -3 cups shredded sharp cheddar cheese


  1. Brown the ground beef until no longer pink and drain off fat.

  2. Mix in the taco seasoning mix with water as directed on back of packet. Cook as directed.

  3. Heat a large skillet over medium-high heat.

  4. Empty refried beans into a medium bowl and heat in the microwave for 1 minute. Spread 1 heaping tablespoon of beans onto a tortilla.

  5. Spoon taco meat onto one half of the beans. Cover with shredded cheese. Fold tortilla over (in half) and heat in skillet for 1 minute or so, long enough to lightly brown and warm the tortilla. Flip it over with a spatula and brown the other side.

These are really simple and tasty. I usually add some pico de gallo to the quesadillas I make, plus some sliced jalapenos. Meat, beans, and cheese are the basic ingredients for me, and I do like to add other things. I almost always serve these with a side of salsa, and some sour cream if I've gone a bit overboard on the spiciness.

Hmmm, I'm not a cowboy but I'm really loving this quesadilla recipe and can't wait to give it a try. So perfect for snacking on those busy days when I want something light but fulfilling at the same time. I might even try using black beans instead of refried, mixing them in with the taco meat and then throw in a little salsa for a nice kick. Yum!

My daughter is crazy over quesadillas and this Cowboy Quesadillas recipe that I just discovered will definitely suit her taste. It's very simple but complete with the Mexican spices that give the quesadillas that irresistible aroma that Mexican food lovers are crazy over.
