Sweet Chili Buttered Shrimps

"A sweet and spicy version of buttered shrimps, with various blends of herb and spices, and sweet chili sauce. We love the garlic, butter, and the sweet and spicy sauce. Although there are different shrimp recipes, like a classic Filipino favorite food shrimp in sour soup, I’m sure that this recipe will make you crave for shrimps even more! There are also buttered shrimp ingredients that can make the dish stand out, like lemon and soda. Let me share a simple yet well-loved recipe of my family."

Ingredients

  • 250 grams shrimps
  • 2 tablespoons butter
  • Spring onions white and green part
  • 1 medium size red onion chopped
  • 4 cloves garlic minced
  • 2 medium size red tomatoes chopped
  • 1 teaspoon ginger paste/ minced
  • Salt
  • Ground black pepper
  • 2 tablespoon lemon juice or calamansi juice you may use sprite if you don’t have any of those
  • 1/4 cup sweet chili sauce
  • 1/4 cup water
  • Sesame oil
  • Cooking oil

Instructions

  1. Heat up pan or wok under medium fire, and add cooking oil. Saute garlic and chopped onion, for about 30 seconds. Add chopped tomatoes, and add a pinch of salt. Let it cook until juice from tomatoes come out. It’s important that you cook the tomatoes properly to avoid food spoilage, and to slightly remove the tangy flavor.

  2. Add the shrimps and ginger paste, turn heat up into medium high. Add butter, sweet chili, water, lemon juice, salt, ground black pepper, and sesame oil. Saute and mix well for a minute.

  3. Add chopped white part of the spring onions and let it cook for another 30 seconds.

  4. Add the green part of the spring onions, and mix it well for another 30 seconds, until it’s slightly cooked. Do not overcook the spring onions.

  5. Sprinkle as many chili flakes as you like, or even fresh chilis! Mix for another 10 to 15 seconds. Taste before serving, and adjust taste to your liking if necessary.

  6. Turn off the heat, and transfer the shrimps to a serving dish.

  7. Serve while hot, and enjoy!
