Salmon is not found in South African waters so, being imported, is not as economical as local fish. As a result, because we are a family of 6, we used a local fish variety which is a lot less pricey. It is really tasty but do keep a careful eye on the grilling process because the maple syrup is very prone to burning. Enjoy!
