It only contains six ingredients and they are so easy to make. It’s weird how that almond butter and egg can mesh together to make what tastes like a cookie with flour. It’s amazing!"

  • 1 cup all natural almond butter
  • 1 cup chocolate chips (I used Enjoy Life mini chips - paleo approved)
  • 1 cup coconut sugar
  • 1 egg
  • 1 teaspoon baking soda
  • 1 teaspoon almond extract (optional)
  1. Preheat oven to 350º F.

  2. Mix all ingredients in a large bowl.

  3. Scoop with a mini ice cream scooper onto a parchment lined cookie sheet.

  4. Bake for about 9-11 minutes.

This looks yummy! I'm not a huge fan of crispy cookies, which is what these look like. But I'm sure that they're still delicious.

My family doesn't follow a paleo diet, but I am always loking for ways to eat healthy, and this recipe for a tasty treat looks amazing! I make almond butter homemade and never thought to use it in a cookie recipe like this! I like how simple the recipe it is and how quickly the cookies can be made! I always try to have a cookie jar full of fresh baked cookies on the kitchen counter, and I look forward trying these cookies next! Yum!
