What makes these Chocolate Haystacks so great is how simple they are to make. As with most no bake cookie recipes, these chocolate and peanut butter filled creations come together in no time. And they're always a hit with friends and family, too. They use very few ingredients, which makes them budget-friendly as well. Chocolate Haystacks are all about that unique texture that you get from using the chow mein noodles. It might sound odd at first, but once you taste these cookies, you'll be sold.

From the Chef: I love to make this no-bake recipe during the summer when it's hot and humid outside. The last thing you want to do is turn on your oven! The kids will love helping you break up the chow mein noodles, which give the cookies an extra crunch.

  • 1 cup dark chocolate chips
  • 1 cup peanut butter chips
  • 1 tablespoon vegetable shortening
  • 1 (6-ounce) package chow mein noodles, coarsely broken
  • 1/2 cup chopped cashews
  • Sea salt


  1. In a medium microwave-safe, bowl, combine the dark chocolate chips, peanut butter ships, and shortening and microwave for 1 minute on high power. Stir and continue to micrwoave in 15-second intervals, stirring after each, until melted.

  2. Stir in the chow mein noodles and cashews until well combined.

  3. Line two baking sheets with parchment paper.

  4. Using a cookie scoop, shape the dough into 1-inch balls and place on the prepared baking sheets about 2 inches apart. Sprinkle the tops with sea salt.

  5. Chill for 1 hour, until set. Serve.
