While this recipe takes just minutes to layer, it does have to sit overnight, so make sure to give yourself the night before an event to create it.

Ingredients

  • 2 (3.5-ounce) packages instant vanilla pudding mix
  • 3 cups plus 1 tablespoon whole milk
  • 1 (8-ounce) container frozen whipped topping, thawed
  • 1 (14.4-ounce) box graham crackers
  • 1 cup Nutella
  • 1 tablespoon corn syrup

Instructions

  1. In a medium bowl, combine the pudding mix and 3 cups of the milk. Add the whipped topping and stir to combine.

  2. Place one layer of graham crackers on the bottom of a 9 x 13-inch baking dish. Top with the pudding–whipped topping mixture and repeat with an additional layer of graham crackers and the pudding–whipped topping mixture. End with a layer of graham crackers.

  3. In a small microwave-safe bowl, combine the Nutella and the remaining 1 tablespoon milk and melt in the microwave on medium heat for 20 seconds. Stir in the corn syrup.

  4. Pour the Nutella mixture on top of the cake. Refrigerate overnight.

  5. Cut into slices and serve.

Anything with Nutella is heaven for me so I knew this Chocolate Eclair cake was going to be divine - and it was! The teenagers had a sleepover the other night so I made it for them. Luckily I first cut a slice for myself (well I couldn't just serve something to children without first tasting it, could I??) otherwise I would not have gotten any! :))

The name and picture have got me drooling and wishing I had a chocolate eclair right now but I'm not sure I'd qualify this as one...although it does sound interesting and worthy of trying. Perhaps if Ritz or maybe even saltine crackers were used instead of the Graham and melted chocolate substituted the Nutella it would be closer to an actual eclair. Hmmm, I've never had Nutella before...maybe this recipe is a reason to try it!

Oh my gosh, I love Nutella so this sounds amazing to me. I also really love a refrigerated cake that doesn't require baking. It's perfect for summer time when everyone wants a treat but we're all too busy to actually bake one. I think you could even switch this up with chocolate pudding for the real chocolate lovers out there. Thanks for an amazing and easy recipe!

Just what I needed. An absolutely scrumptious, easy to make, no bake cake. This Chocolate Eclair Cake is such a great combination of ingredients and flavors you really can't go wrong. Just a little assembly required and you've got yourself one great cake. Hope I don't end up "sleep walking" in the middle of the night, and eat the cake.

Yummy this cake looks awesome. It seems so simple to make. I think I must get going. I have to eat gluten-free and some cakes are difficult to convert using gluten-free products but this one is not and that is great as the gluten-free products are readily available. I will definitely be making this!

I can't wait to make this sweet goodness of a cake. I think I might call it a birthday cake for a family member who doesn't like traditional birthday cake. When you put pudding, Cool Whip, Nutella and graham crackers in the same recipe, it has to be good.

I love icebox cakes because they're incredibly easy to make and usually incredibly tasty. This is a wonderful cake to make up. I alternated chocolate graham cracker layers with regular graham cracker layers and it turned out extremely well. The Nutella topping just makes this easy recipe perfect. Thanks for posting this!

First, I have to say that this does not taste like chocolate eclairs. That said, I have to say that I'm glad it didn't. I was pleasantly surprised by this recipe! This is one of those refrigerator desserts that are SO good, that you think about it the whole time it's in the fridge. This was gone the same day I made it! The only thing I changed was to use homemade whipped cream instead of whipped topping.
